When I went raw vegan, and discovered nice cream also known as nana cream, I was hooked. It’s so good! It’s like eating ice cream but it’s healthy and doesn’t harm animals. It’s good for you because it’s made with only one ingredient, bananas. You can also add other ingredients to change the flavor but it’s great alone too. My daughters’ favorite way to eat nice cream is plain vanilla topped with our homemade peanut butter.
Nice cream became my staple breakfast food. Yes, even though it tastes like you’re eating dessert you can eat it any time. It’s pretty much what I ate for breakfast my first year of being raw vegan. In wintertime I eat it while bundled up in blankets.
We buy anywhere from 50 to 100 bananas each week. We get them by the case at Trader Joes. We go through a lot of them because I eat them in nice cream and put them in green smoothies for my hubby.
This recipe may sound weird because it has spinach and celery, but the mixture of spinach and celery gives it a sweet and salty flavor. I was very surprised by how good it tastes.
- 4-5 frozen bananas
- 1 cup baby spinach
- 1-2 celery stalks
Peel and freeze bananas. Once fully frozen place them in a high-speed blender with spinach and celery. Blend using tamper until smooth and creamy or desired texture.
NOTE: You can also make nice cream using a food processor. Add frozen bananas and celery into processor and blend until almost smooth. The bananas will start to look like dippin dots and you'll need to stop and scrape down the sides. It may take several minutes in the processor, but they will eventually become creamy. Then add spinach and continue blending until smooth and creamy.
VANILLA NICE CREAM
