I’ve been raw vegan for over a year now! It’s amazing how quickly the time went by. I started eating 100% raw on Sept. 17, 2016. I’d already been vegan for over ten years and was eating a very high raw diet. I was feeling guided to switch to a fully raw vegan diet so I decided to listen to my gut and do it.
We had a trip to Italy planned around that time and I wanted to allow myself to eat some cooked vegan food while there. I wanted to try fresh pasta, pizza and whatever else I desired. I wasn't eating much of those foods anymore because I had switched to eating more unprocessed whole foods, but I’m Italian and this was my first time going to Italy, so I wanted to try authentic Italian food while there.
I ate a couple slices of pizza and a bite or two of pasta in Italy, and they were delicious. Everything tasted fresh and homemade. Of course, it was all vegan. Oh…any I did eat a piece of vegan chocolate cake on my birthday while we were there. It was one of the best cakes I’ve ever had. I don’t normally eat any processed sugar because I can feel it right away in my body and it bothers me. This cake didn’t bother me at all. It was pure yumminess!
When we came home from our trip I started eating fully raw vegan the next day. I’m so glad I listened to my gut and made the change. I feel amazing!
SOME OF THE BENEFITS I’VE EXPERIENCED
I have an abundance of energy and haven’t gotten sick at all since going raw. I didn't usually get sick much anyway but sometimes I’d catch a cold or something when others around me had it. During this past year even when others around me were sick, I stayed healthy.
Another great benefit I’ve noticed since switching to raw is that the gray hair I was starting to get around my face are turning brown and I have much less gray. Yay!
Before going raw I had been having some hormonal issues and menopause symptoms. Since switching to raw my hormones are balanced and I feel great.
WHAT I EAT
I eat a high fruit based low-fat diet. I eat simply most days having fruit for breakfast and fruit or salad for lunch. For dinner I eat a variety of foods such as tacos, lasagna, burgers, pasta, salad or even more fruit. It depends on what I feel like eating.
Since switching to vegan and then raw, I’ve discovered new foods that I love. I had never tried a mango until this past year and it’s one of my favorite fruits now. I also love medjool dates. They’re like caramel candy to me. Nice cream also known as nana cream is another new favorite of mine.
I eat a larger variety of foods then I used to on the standard American diet. The best part is that I feel so much better and I know I’m creating health and longevity for my life.
Here’s some of the foods I get to enjoy now.
Nana cream is what I eat most mornings for breakfast, even when it's cold outside. You'll find me snuggled under a blanket eating breakfast. In fact, I just ordered an electric throw blanket, so I can eat it and stay warm. I know it's crazy, but nana cream is so delicious. It's like eating ice cream but healthy for you and kind to animals.
These are two of my favorite flavors. They both start with a base of just frozen bananas blended. The one on the left is vanilla topped with a caramel date sauce. The right is one of my new favorites. Its frozen bananas blended with baby spinach and celery. I know it sounds weird, but it tastes sweet with a little salty flavor thanks to the celery. It's a great way to add greens to your diet. I eat the "breakfast" foods you see in the pics below any time of day, not just for breakfast.
Banana pancakes and cinnamon rolls are two of my favorite raw vegan foods to eat for breakfast or any time of day.
